vegan banana, pecan & flax pancakes

vegan, pancakes, banana, nut, flax, healthy, Today is my first Monday back in America. Having said that, what better way to beat a case of the Mondays than to make and eat some pancakes? I've been wanting to try this recipe for quite some time, with a few of my own additions! I have to say, I started my first full week back by feeling like a domestic diva. Whipping up some pancakes out of completely plant-based ingredients does that I guess.  No matter what your diet is, these pancakes are delicious and you probably have all of the ingredients in your cupboard right now.

ingredients, pancakes, vegan, banana, nut, What you'll need: 1 cup of flour, 1 tablespoon brown sugar, 1 teaspoon baking powder, 1/4 teaspoon of salt, a dash of cinnamon, (I love cinnamon so I used a little more than a dash!) 3/4 cup of rice milk, (or soy, almond, etc.) 1/2 of a banana, mashed (the riper, the better), 1 teaspoon of vanilla, a handful of pecan halves crushed into smaller pieces, 1 1/2 tablespoons of ground flax and 1 tablespoon of coconut oil. 

1. Mix the flour, brown sugar, baking powder, salt, cinnamon, flax, and pecans together.
2. Mix the banana, rice milk, and vanilla together. Pour them into the dry ingredients and mix well.
3. Melt some coconut oil in a hot pan or skillet. Pour in the batter and cook until they look like pancakes! (Browned on both sides and cooked all the way through.)
