homemade flour tortillas (with olive oil!)

Who doesn't like tortillas? Jenna was playing around in the kitchen with some healthier tortillas recipes and came up with this one. It uses Olive Oil instead of the traditional lard or vegetable shortening, which makes it heart-healthy! If you REALLY wanna make it good for you, use White Whole Wheat Flour. It'll maintain the same texture of traditional tortillas with the benefits of whole wheat, such as more fiber.

What you'll need: 2 1/2 cups of flour, a flour sifter, 1 tsp. of baking powder, 1/2 tsp. of salt, 2 tbsp. olive oil, 1/2 cup of warm water, rolling pin, damp cloth, and a cast iron skillet.

1. Sift all of the dry ingredients together in a large mixing bowl. Mix them and then make a hole in the middle of the dry mixture. Pour in the olive oil and stir. Add the warm water and continue to mix. You may need to mix with your hands at this point. More water may be required but only add a tiny bit at a time. mix until smooth.

2. Put some flour on both of your hands to keep the dough from sticking and begin to knead 8 times. Flip it over each time, making sure that the dough becomes stretchy and does not stick to your hands.

3. Out of the clump of dough, begin to take off golfball-sized pieces and roll them into dough balls. Take one and flatten it, using the rolling pin until it reaches the desired thickness. If you're having a problem with the dough sticking, don't be afraid to use a little more flour to keep it form sticking. Take each flattened tortilla and cover it with a damp cloth until you have flattened all of the balls of dough.

4. Heat up your skillet. Jenna and I made the mistake of greasing our skillet. Don't do this! We tried it again later without greasing it and it looked a lot more like a tortilla. Place one tortilla on the hot skillet and cook it until it turns a light brown. Flip it with a fork or a spatula and brown the other side. Be careful to not burn them!

Jenna put sautéed veggies, avocado, and goat cheese in this tortilla. Sure beats taco bell, right?
